Ingredients

Units Scale
  • 1 box french vanilla cake mix
  • 1 large egg
  • 1/2 cup unsalted butter
  • 3 cup easter sprinkles
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 1/2 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 2 tbsp heavy whipping cream
  • Pink gel food coloring
  • Vanilla frosting

Instructions

  1. Prepare the oven and baking sheets
Preheat the oven to 375ยฐF (190ยฐC). Line two cookie sheets with parchment paper or silicone baking mats to prevent sticking and ensure easy cleanup.
  2. Mix the dough
In a standing mixer with a whisk attachment, combine the cake mix, egg, and ยฝ cup of unsalted butter. Beat the ingredients until a soft dough forms, ensuring all components are well incorporated.
  3. Add sprinkles to the dough
Gently fold in 1 cup of Easter sprinkles into the dough, distributing them evenly throughout the mixture.
  4. Shape the cookies
Using a small cookie scoop, portion out the dough and roll it into balls. Pour the remaining sprinkles into a bowl and coat each dough ball thoroughly in sprinkles.
  5. Bake the cookies
Place the sprinkle-coated dough balls onto the prepared cookie sheets, leaving space between each. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  6. Cool the cookies
Remove the baked cookies from the oven and allow them to cool completely on the baking sheets.
  7. Prepare the frosting
In a standing mixer, beat ยฝ cup of softened butter, powdered sugar, vanilla extract, heavy whipping cream, and a few drops of pink gel food coloring. Mix until the frosting is creamy and can hold a peak.
  8. Assemble the whoopie pies
Pair the cooled cookies to make sandwiches. Pipe a generous amount of frosting onto the flat side of one cookie, then gently press the flat side of another cookie on top to create the whoopie pie.
