Description

This Dirty Martini Pasta Salad is a delightful twist on a classic pasta salad, with the briny flavors of green olives and a tangy dressing that will have you coming back for seconds.


Ingredients

Pasta:

  • 1/2 pound pasta of choice

Dressing:

  • 1/3 cup extra virgin olive oil
  • 1/4 cup olive brine
  • 1 clove fresh minced garlic
  • Zest of half a lemon
  • Juice of 1/4 lemon
  • Black pepper to taste

Add-Ins:

  • 1 cup pitted large green olives, roughly chopped
  • 100 g feta cheese, cubed or blue cheese crumbles

Instructions

  1. Cook the Pasta: Boil the pasta according to package instructions, then drain and rinse with cold water.
  2. Make the Dressing: In a mason jar, shake together olive oil, olive brine, minced garlic, lemon zest, lemon juice, and black pepper.
  3. Combine Ingredients: In a bowl, mix pasta, olives, and feta. Toss with dressing. Adjust seasoning to taste.

Notes

  • Very lightly salt the pasta water and adjust salt at the end due to the salty olives and feta.
  • Classic green olives can be swapped for any type, and use gluten-free pasta if needed.
  • Chill for 30 minutes before serving and store leftovers in the fridge for up to 3 days.
