Brownie Cookie Batter:
- 7 oz (200g) bittersweet chocolate, chopped
- 1/4 cup (56g) unsalted butter
- 2 large eggs, at room temperature
- 3/4 cup (150g) granulated sugar
- 3 tablespoons (24g) cornstarch
- 1/4 cup (21g) cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (85g) dark chocolate chips
Instructions
- Preheat Oven: Preheat oven to 375°F. (Note: Turn down to 350°F before baking.) Line baking sheets with parchment paper.
- Melt Chocolate: Melt chocolate and butter until smooth and glossy. Set aside.
- Prepare Batter: Beat eggs and sugar until pale and thick. Fold in warm chocolate mixture.
- Add Dry Ingredients: Sift cornstarch, cocoa, baking powder, and salt. Stir into chocolate mixture. Fold in chocolate chips.
- Chill Batter: Cover and set aside for 10 minutes or until batter is fudge-like.
- Bake Cookies: Scoop batter onto baking sheets. Bake at 350°F for 8-11 minutes. Cool on racks.
