For the Spiced Chickpeas:
- 1 (15 oz) can chickpeas, drained and rinsed
- 2 teaspoons olive oil
- 3/4 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon smoked paprika, optional
- 1/2 teaspoon salt
For the Caesar Salad Mix:
- 3–4 cups chopped romaine lettuce, 1 large head or 2 smaller heads
- 1/2 cup caesar dressing
- 1/2 cup freshly shredded or shaved parmesan cheese
- 1 cup croutons
- 1 ripe avocado, mashed with a fork (optional)
- 2–3 large wraps
Instructions
- Prepare Spiced Chickpeas: Rinse and drain chickpeas, pat them dry. Heat olive oil in a skillet over medium heat, add chickpeas, paprika, garlic powder, onion powder, and salt. Cook until chickpeas are crispy, about 5 minutes.
- Make Caesar Salad Mix: Toss romaine lettuce with caesar dressing in a bowl. Add parmesan cheese and croutons, mix well.
- Assemble Wraps: Spread mashed avocado on a wrap, top with chickpeas and Caesar salad mix. Roll up tightly, optionally sealing in a hot pan. Cut in half and serve.
