Description

These Chickpea Caesar Salad Wraps are a delightful twist on the classic Caesar salad, featuring crispy spiced chickpeas, creamy Caesar dressing, and crunchy romaine lettuce all wrapped up in a soft tortilla. Perfect for a quick and satisfying meal.

For the Spiced Chickpeas:

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 2 teaspoons olive oil
  • 3/4 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika, optional
  • 1/2 teaspoon salt

For the Caesar Salad Mix:

  • 34 cups chopped romaine lettuce, 1 large head or 2 smaller heads
  • 1/2 cup caesar dressing
  • 1/2 cup freshly shredded or shaved parmesan cheese
  • 1 cup croutons
  • 1 ripe avocado, mashed with a fork (optional)
  • 23 large wraps

Instructions

  1. Prepare Spiced Chickpeas: Rinse and drain chickpeas, pat them dry. Heat olive oil in a skillet over medium heat, add chickpeas, paprika, garlic powder, onion powder, and salt. Cook until chickpeas are crispy, about 5 minutes.
  2. Make Caesar Salad Mix: Toss romaine lettuce with caesar dressing in a bowl. Add parmesan cheese and croutons, mix well.
  3. Assemble Wraps: Spread mashed avocado on a wrap, top with chickpeas and Caesar salad mix. Roll up tightly, optionally sealing in a hot pan. Cut in half and serve.
