Description

This Crock Pot Lemonade Chicken is a sweet and tangy dish that’s perfect for an easy weeknight meal! Tender chicken breasts are slow-cooked in a flavorful lemonade-based sauce, making them incredibly juicy and delicious.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 6 ounces thawed lemonade concentrate (3/4 cup)
  • 3 tablespoons brown sugar
  • 3 tablespoons ketchup
  • 1 tablespoon white vinegar or rice wine vinegar
  • 2 tablespoons water
  • 2 tablespoons flour
  • Lemon slices or wedges, for serving
  • Cooked white rice and steamed vegetables (such as broccoli), for serving

Instructions

  1. Add Chicken and Sauce: Lightly grease the slow cooker insert with cooking oil. Place chicken breasts in the slow cooker. In a bowl, whisk together lemonade concentrate, brown sugar, ketchup, and vinegar. Pour the sauce over the chicken.
  2. Slow Cook: Cover and cook on LOW for 4-6 hours, or on HIGH for 2-3 hours.
  3. Thicken Sauce: 30 minutes before the chicken is done, whisk together flour and water to make a slurry. Remove chicken from the slow cooker, turn the heat to HIGH, and whisk in the slurry. Return chicken to the slow cooker and cook for the remaining 30 minutes.
  4. Serve: Serve chicken over cooked rice with a side of steamed vegetables. Pour some sauce over the chicken and garnish with lemon slices or wedges.

  • Add extra water for more or thinner sauce.
  • For gluten-free, use gluten-free flour or an alternative thickener like arrowroot or tapioca starch.
  • For paleo or refined sugar-free, use coconut sugar and sugar-free ketchup.
