Instructions

  1. Prepare the Zucchini
    Finely grate the zucchini into a mixing bowl. Sprinkle half the salt over the grated zucchini and let it sit for 10 minutes. This helps to draw out the moisture.
  2. Remove Excess Moisture
    After resting, use your hands or a cheesecloth to thoroughly squeeze out all the excess moisture from the zucchini. Removing the moisture is crucial for crispy fritters.
  3. Mix the Batter
    In a large mixing bowl, combine the zucchini, scallions, beaten eggs, almond flour, baking powder, and freshly grated parmesan cheese. Mix until well combined.
  4. Fry the Fritters
    Heat 2 tablespoons of oil in a non-stick skillet over medium heat. Once the oil is hot, scoop spoonfuls of the zucchini batter into the skillet, pressing each portion into a flat, disc-like shape. Fry each fritter for 2โ€“3 minutes on each side, or until golden and crispy.
  5. Drain and Serve
    Place the cooked fritters on a wire rack to allow any excess oil to drain. Serve your zucchini fritters hot with your favorite dipping sauce.
