Instructions
- Prepare the Zucchini
Finely grate the zucchini into a mixing bowl. Sprinkle half the salt over the grated zucchini and let it sit for 10 minutes. This helps to draw out the moisture. - Remove Excess Moisture
After resting, use your hands or a cheesecloth to thoroughly squeeze out all the excess moisture from the zucchini. Removing the moisture is crucial for crispy fritters. - Mix the Batter
In a large mixing bowl, combine the zucchini, scallions, beaten eggs, almond flour, baking powder, and freshly grated parmesan cheese. Mix until well combined. - Fry the Fritters
Heat 2 tablespoons of oil in a non-stick skillet over medium heat. Once the oil is hot, scoop spoonfuls of the zucchini batter into the skillet, pressing each portion into a flat, disc-like shape. Fry each fritter for 2โ3 minutes on each side, or until golden and crispy. - Drain and Serve
