For the Hot Honey
- 1/3 cup / 110g Honey
- 1 1/2 tsp Hot Sauce (e.g., Frank’s or Cholula)
- 3/4 tsp Chilli Flakes
For the Chicken
- 2 x 250g / 9oz Chicken Breasts
- 2 tsp Paprika
- 1 tsp Salt
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic Powder
- 1/2 tsp Dried Oregano
- 1/4 tsp Cayenne Pepper
- 35g / 1/4 cup Plain Flour
- 2 Eggs, beaten
- 65g / 1 cup Panko Breadcrumbs
- Veg Oil, as needed (6-8 tbsp)
For Topping
- 200g / 7oz Feta, crumbled
Instructions
- Prepare the Hot Honey: Combine the honey, hot sauce, and chilli flakes in a microwave-safe bowl. Microwave for about 20 seconds until warmed, then stir well. Alternatively, simmer gently in a small pot on the stove, then remove and cool. Set aside to allow infusing of the chilli flakes.
- Prepare the Chicken: Horizontally slice each chicken breast to create four even pieces. In a small bowl, mix paprika, salt, onion powder, garlic powder, oregano, cayenne, and black pepper.
- Set up Dredging Stations: Arrange three shallow dishes. In the first, combine flour with half of the seasoning mixture. In the second, beat the eggs. In the third, place Panko breadcrumbs with the remaining seasoning.
- Coat the Chicken: Dredge each piece of chicken first in the seasoned flour, then dip into the beaten eggs, and finally coat thoroughly with the seasoned Panko breadcrumbs. Place on a tray as you go.
- Fry the Chicken: Heat enough vegetable oil in a large skillet over medium-high heat until a breadcrumb sizzles upon contact. Fry chicken in batches if needed, 3-4 minutes per side until golden and crispy. Transfer to a wire rack over a paper-towel-lined tray to drain excess oil.
- Add Feta and Grill: Distribute the crumbled feta over the crispy chicken breasts. Place under a hot grill or broiler on high for 2-3 minutes, or until feta begins to turn golden and slightly crispy.
- Serve: Drizzle the infused hot honey generously over the feta-topped chicken. Serve immediately with your preferred side dishes for a delicious, spicy-sweet meal.
Notes
- Hot Honey – You can adjust the heat by adding more chili flakes or hot sauce according to your spice preference. You can prepare this in advance and store refrigerated for up to a week.
- Baking Option – To bake instead of frying, toast the breadcrumbs with a spray of oil at 180°C/350°F for 5 minutes, then follow the same coating process. Bake coated chicken at 220°C/430°F for 10 minutes, then flip, spray, and bake for another 8-10 minutes until crispy.
