- 1 pound salmon fillet (or 4 individual fillets), skin on or off
- 1 tablespoon butter
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, drained and chopped
- 1 teaspoon Italian seasoning, plus more to taste
- 1 cup heavy cream
- 1/4 cup chicken broth (or dry white wine)
- 1/2 cup grated Parmesan cheese
- 1โ2 cups baby spinach
- Fresh parsley or basil, for garnish (optional)
Instructions
- Sear Salmon: Heat olive oil in a large skillet over medium-high heat. Season salmon with salt and pepper. Sear salmon, skin-side down (if skin is on), until golden brown. Flip and sear the other side briefly. Remove salmon and set aside.
- Sautรฉ Aromatics and Vegetables: Melt butter in the same skillet. Sautรฉ onion until translucent, then add garlic and cook for 1 minute. Stir in sun-dried tomatoes and Italian seasoning.
- Make Creamy Sauce: Gradually whisk in chicken broth (or white wine), then heavy cream and Parmesan cheese. Bring to a simmer and cook until thickened, seasoning with salt and pepper to taste.
- Combine and Finish: Add spinach to the sauce and cook until wilted. Return salmon to the skillet and spoon sauce over the top.
