- 4 boneless skinless chicken breasts
- 2 teaspoons Homemade Italian Seasoning or store-bought
- ½ teaspoon onion powder
- Kosher salt and cracked black pepper to taste
Sauce
- ½ cup chicken broth
- 1 cup heavy cream
- 2 cloves minced garlic
- ½ cup sun-dried tomatoes, drained and chopped
- 1 tablespoon all-purpose flour
- ½ cup grated Parmesan cheese
Greens
- 1 cup chopped baby spinach
Instructions
- Season the Chicken: Season both sides of 4 boneless skinless chicken breasts with 2 teaspoons Homemade Italian Seasoning, ½ teaspoon onion powder, and Kosher salt and cracked black pepper to taste.
- Prepare the Crockpot: Spray the inside of the crockpot with nonstick cooking spray. Layer the seasoned chicken breasts in the bottom of the crockpot.
- Make the Sauce: In a mixing bowl, whisk together ½ cup chicken broth, 1 cup heavy cream, 2 cloves minced garlic, ½ cup chopped sun-dried tomatoes, 1 tablespoon all-purpose flour, and ½ cup grated Parmesan cheese until well combined.
- Combine and Cook: Pour the sauce over the chicken in the crockpot. Cover and cook on high for 3 hours or on low for 5 hours until the chicken is tender and cooked through.
- Add Spinach Before Serving: Right before serving, stir in 1 cup chopped baby spinach. Replace the lid and let the spinach wilt for a few minutes.
- Final Seasoning and Serve: Taste and adjust seasoning with additional salt and pepper if needed. Serve the creamy Tuscan chicken over cooked pasta or your preferred side. Enjoy!

- For a thicker sauce, remove the chicken after cooking and simmer the sauce on high without the lid to reduce and thicken before serving.
