  • 4 boneless skinless chicken breasts
  • 2 teaspoons Homemade Italian Seasoning or store-bought
  • ½ teaspoon onion powder
  • Kosher salt and cracked black pepper to taste

Sauce

  • ½ cup chicken broth
  • 1 cup heavy cream
  • 2 cloves minced garlic
  • ½ cup sun-dried tomatoes, drained and chopped
  • 1 tablespoon all-purpose flour
  • ½ cup grated Parmesan cheese

Greens

  • 1 cup chopped baby spinach


Instructions

  1. Season the Chicken: Season both sides of 4 boneless skinless chicken breasts with 2 teaspoons Homemade Italian Seasoning, ½ teaspoon onion powder, and Kosher salt and cracked black pepper to taste.
  2. Prepare the Crockpot: Spray the inside of the crockpot with nonstick cooking spray. Layer the seasoned chicken breasts in the bottom of the crockpot.
  3. Make the Sauce: In a mixing bowl, whisk together ½ cup chicken broth, 1 cup heavy cream, 2 cloves minced garlic, ½ cup chopped sun-dried tomatoes, 1 tablespoon all-purpose flour, and ½ cup grated Parmesan cheese until well combined.
  4. Combine and Cook: Pour the sauce over the chicken in the crockpot. Cover and cook on high for 3 hours or on low for 5 hours until the chicken is tender and cooked through.
  5. Add Spinach Before Serving: Right before serving, stir in 1 cup chopped baby spinach. Replace the lid and let the spinach wilt for a few minutes.
  6. Final Seasoning and Serve: Taste and adjust seasoning with additional salt and pepper if needed. Serve the creamy Tuscan chicken over cooked pasta or your preferred side. Enjoy!
