  • 10.5 oz cream of chicken soup
  • 1 ½ cups milk
  • 1 cup sour cream, at room temperature
  • ½ teaspoon onion powder
  • 1 oz packet Ranch seasoning mix


Instructions

  1. Prepare the Chicken: Slice each chicken breast into 2-3 thinner pieces about ½ inch thick. If needed, use a meat tenderizer to even out the thickness. This helps the chicken cook evenly and become plump.
  2. Season the Chicken: Pat the chicken slices completely dry with paper towels. Sprinkle both sides evenly with Italian seasoning and salt and pepper to taste. Brush one side of each piece with the melted butter, making sure it’s not too hot to avoid cooking the butter prematurely.
  3. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, sear the chicken slices in batches for about 4-5 minutes on each side until they develop a golden-brown crust. Remove the chicken from the skillet and set aside.
  4. Make the Sauce: To the same skillet, add the cream of chicken soup, milk, sour cream, onion powder, and ranch seasoning mix. Stir well to combine all the ingredients. Let the sauce bubble gently over medium heat for about 5 minutes, allowing it to thicken and reduce slightly.
  5. Simmer the Chicken in Sauce: Return the seared chicken slices to the skillet, spooning the creamy ranch sauce over the top. Partially cover the skillet and let the chicken cook through in the sauce for about 10 minutes, letting the flavors meld and the chicken absorb the sauce.
  6. Serve: Serve hot, ideally with baked potatoes or steamed vegetables, spooning extra creamy ranch sauce over the dish for maximum flavor.
