Description

Creamy Lemon Garlic Butter Beans is a delicious and comforting vegan dish that combines buttery beans with a creamy, tangy lemon garlic sauce. This recipe is easy to make and perfect for a quick weeknight dinner.


Ingredients

For the Creamy Lemon Garlic Butter Beans:

  • 2 small shallots, diced, or 1 large
  • 4-5 cloves garlic, finely minced
  • 3 Tablespoons vegan butter
  • 30 ounces canned butter beans (2 cans with the liquid added to the pot - do not strain!)
  • 1/4 cup vegan cream cheese
  • 2 Tablespoons lemon juice
  • 1/2 Tablespoon lemon zest (zest of 1 lemon)
  • 3 cups spinach
  • Salt & pepper to taste (add salt as desired, but I recommend at least 1/2 teaspoon pepper)

Instructions

  1. Prep Ingredients: Finely dice the shallots and mince the garlic.
  2. Saute Shallots and Garlic: Melt vegan butter in a large pot over medium heat. Add shallots and garlic, saute for about 3 minutes.
  3. Add Beans: Add canned butter beans with the liquid. Simmer for 5 minutes.
  4. Add Creamy Ingredients: Stir in vegan cream cheese, lemon juice, and lemon zest. Simmer for an additional 2 minutes.
  5. Add Spinach: Turn off the heat and add spinach. Stir until wilted.
  6. Season and Serve: Season with salt & pepper, then serve warm with toasted bread.

Notes

  • Serve with toasted sourdough or spelt bread.
  • Best enjoyed fresh, but can be stored in the fridge for 3-4 days or freezer for 1 month. Reheat to enjoy.
