Ingredients

Italian Sausage:

16 ounces,

Butter:

1/4 cup,

Onion:

1/2 medium, chopped small,

Celery:

2 sticks, chopped small,

Garlic:

2 cloves, minced,

Flour:

6 tablespoons,

Low Sodium Chicken Broth:

4 cups,

Half-and-Half:

2 cups,

Worcestershire Sauce:

1 teaspoon,

Crushed Red Pepper Flakes:

1/2 teaspoon, optional,

Russet Potatoes:

1 pound, peeled & diced small,

Salt & Pepper:

to taste

Instructions

  1. Cook Sausage: Add the sausage meat to a soup pot. Cook until browned (about 10 minutes), breaking it up with a spoon. Transfer to a paper towel lined plate.
  2. Sauté Vegetables: In the same pot, add butter, onion, and celery. Sauté for 4-5 minutes. Add garlic and flour. Cook for 2 minutes.
  3. Add Broth & Cream: Whisk in chicken broth, then add half-and-half, Worcestershire sauce, red pepper flakes, and potatoes. Return sausage to pot. Bring to a boil, then simmer for 15 minutes.
  4. Season and Serve: Season with salt and pepper. Serve hot.
