Instructions

  1. Cook Pasta: Boil a large pot of salted water and cook the pasta according to the package directions until al dente. Drain and set aside.
  2. Prepare Chicken: Cut chicken breasts into bite-sized pieces and sprinkle with garlic powder. Dredge the pieces lightly in flour to coat.
  3. Sauté Chicken: Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Add the chicken pieces and cook for about 5 minutes, turning occasionally until browned but not fully cooked through. Remove chicken and place on a plate.
  4. Cook Mushrooms: In the same skillet, add the remaining butter and cremini mushrooms. Cook for 3-4 minutes until mushrooms release their water and the liquid evaporates. Remove mushrooms and place with the chicken.
  5. Make Sauce: Add chicken broth, Marsala wine, and Dijon mustard to the skillet. Stir or whisk to dissolve the mustard and allow the mixture to bubble and reduce for about 2 minutes.
  6. Combine and Finish: Stir in the heavy cream, then add the chicken and mushrooms back to the skillet. Reduce heat to medium and cook for a few minutes until the sauce thickens and the chicken is cooked through.
  7. Season and Serve: Season with salt and pepper to taste. Toss the cooked pasta in the sauce, adding a little reserved pasta water if needed to loosen the sauce. Serve topped with freshly grated parmesan cheese if desired.
