Ingredients
Scale
Pasta
- 8 ounces uncooked pasta
Chicken and Sauce
- 1 tablespoon olive oil
- 2 tablespoons butter (divided)
- 2 chicken breasts
- 1/4 teaspoon garlic powder
- Flour (for dredging)
- 8 ounces cremini mushrooms
- 1/2 cup Marsala wine
- 1/2 cup chicken broth
- 1/2 teaspoon Dijon mustard
- 1/2 cup heavy/whipping cream
- Salt & pepper (to taste)
- Freshly grated parmesan cheese (optional, to taste)
Instructions
- Cook Pasta: Boil a large pot of salted water and cook the pasta according to the package directions until al dente. Drain and set aside.
- Prepare Chicken: Cut chicken breasts into bite-sized pieces and sprinkle with garlic powder. Dredge the pieces lightly in flour to coat.
- Sauté Chicken: Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Add the chicken pieces and cook for about 5 minutes, turning occasionally until browned but not fully cooked through. Remove chicken and place on a plate.
- Cook Mushrooms: In the same skillet, add the remaining butter and cremini mushrooms. Cook for 3-4 minutes until mushrooms release their water and the liquid evaporates. Remove mushrooms and place with the chicken.
- Make Sauce: Add chicken broth, Marsala wine, and Dijon mustard to the skillet. Stir or whisk to dissolve the mustard and allow the mixture to bubble and reduce for about 2 minutes.
- Combine and Finish: Stir in the heavy cream, then add the chicken and mushrooms back to the skillet. Reduce heat to medium and cook for a few minutes until the sauce thickens and the chicken is cooked through.
- Season and Serve: Season with salt and pepper to taste. Toss the cooked pasta in the sauce, adding a little reserved pasta water if needed to loosen the sauce. Serve topped with freshly grated parmesan cheese if desired.
Notes
- This recipe features tender chicken, flavorful mushrooms, and a creamy Marsala sauce, making it an easy yet elegant twist on the classic Chicken Marsala.
- Be careful not to overcook the chicken when browning to keep it tender and juicy as it finishes cooking in the sauce.
- Add a splash of pasta water to adjust the sauce consistency if it becomes too thick.
- Freshly grated parmesan cheese is optional but adds a savory finish to the dish.
