- 2 boneless, skinless chicken breasts, cubed
- 1 teaspoon kosher salt
- 1 teaspoon ground black pepper
- 1 tablespoon olive oil
- 1 cup heavy cream, room temperature
- 1 cup low-sodium chicken broth
- 1/4 cup freshly shredded Parmesan cheese
- 1/4 cup sun-dried tomato pesto
- 1 pound gnocchi (1 package)
- 2 cups fresh baby spinach
Instructions
- Cook Chicken: Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken until it reaches an internal temperature of 165°F (74°C). Remove chicken and set aside.
- Make Sauce and Cook Gnocchi: In the same skillet, combine heavy cream, chicken broth, Parmesan cheese, and sun-dried tomato pesto. Add gnocchi, cover, and cook for 5 minutes.
- Add Chicken and Spinach: Stir in cooked chicken and spinach. Cook for 2 minutes, or until spinach is wilted.
- Serve: Serve immediately.
Notes
- If you don’t have sun-dried tomato pesto, you can substitute with regular pesto or your favorite pasta sauce.
- For a thicker sauce, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) towards the end of the cooking time.
- Garnish with additional Parmesan cheese and a sprinkle of red pepper flakes, if desired.
