These Creamy Chicken Calzones are a delicious and satisfying meal that’s easy to customize! Flaky pizza dough is filled with a creamy ricotta mixture, tender chicken, spinach, and melted mozzarella cheese, then baked to golden perfection.

  • 1/2 cup fresh spinach, chopped
  • 2 large eggs, divided
  • 1/2 cup ricotta cheese (full fat)
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 12 ounces pizza dough (store-bought or homemade)
  • 2 tablespoons flour, for rolling dough
  • 1/2 cup mozzarella cheese, shredded
  • Marinara sauce, for serving (optional)

Instructions

  1. Preheat and Prep: Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper or foil and spray with cooking spray.
  2. Prep Filling: Dice chicken into ½-inch pieces. Roughly chop spinach.
  3. Make Ricotta Mixture: Separate one egg. Add the yolk to a medium bowl. Place the white in a separate bowl. Add ricotta, garlic powder, oregano, basil, and salt to the yolk. Mix well. Add spinach and mix again.
  4. Roll Dough: Divide dough into four equal pieces. Lightly flour your work surface. Roll each piece into a 7-inch circle.
  5. Assemble Calzones: Spread ricotta mixture on half of each circle, leaving a 1-inch border. Top with chicken and mozzarella cheese, dividing evenly.
  6. Seal Calzones: Fold dough over the filling to create a half-moon shape. Press edges to seal. Fold and roll the edge to create a ridge.
  7. Egg Wash: Transfer calzones to baking sheets. Whisk the reserved egg white with the remaining egg. Brush the egg wash over the calzones.
  8. Bake: Bake for 15-18 minutes, or until golden brown.
  9. Serve: Top with Parmesan cheese (optional). Serve hot with warmed marinara sauce for dipping (optional).
