Description

Chicken:

  • 1 pound chicken breasts, cut into small bite-size cubes
  • 1 teaspoon sweet paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Rice:

  • 2 tablespoons unsalted butter
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 cup long-grain rice, such as Jasmine
  • 2 cups low-sodium chicken broth
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese

Garnish:

  • Fresh parsley for garnish

Instructions

  1. Season the chicken: Coat the chicken with sweet paprika, garlic powder, and onion powder. Set aside.
  2. Cook the onions: In a large skillet, melt butter over medium heat. Add onions and cook until soft. Add garlic and cook until fragrant.
  3. Cook the chicken: Add seasoned chicken to the skillet and cook until no longer pink.
  4. Add rice and broth: Stir in Italian seasoning, rice, and chicken broth. Season with salt and pepper. Simmer covered for 15 minutes.
  5. Finish the dish: Stir in heavy cream and Parmesan. Cook until the rice absorbs the cream. Adjust seasoning. Garnish with parsley and serve.

Notes

  • Rinse the rice before cooking to remove excess starch.
  • Do not disturb the lid while cooking the rice.
