Chicken:
- 1 pound chicken breasts, cut into small bite-size cubes
- 1 teaspoon sweet paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Rice:
- 2 tablespoons unsalted butter
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 cup long-grain rice, such as Jasmine
- 2 cups low-sodium chicken broth
- Salt and pepper to taste
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
Garnish:
- Fresh parsley for garnish
Instructions
- Season the chicken: Coat the chicken with sweet paprika, garlic powder, and onion powder. Set aside.
- Cook the onions: In a large skillet, melt butter over medium heat. Add onions and cook until soft. Add garlic and cook until fragrant.
- Cook the chicken: Add seasoned chicken to the skillet and cook until no longer pink.
- Add rice and broth: Stir in Italian seasoning, rice, and chicken broth. Season with salt and pepper. Simmer covered for 15 minutes.
- Finish the dish: Stir in heavy cream and Parmesan. Cook until the rice absorbs the cream. Adjust seasoning. Garnish with parsley and serve.
Notes
- Rinse the rice before cooking to remove excess starch.
- Do not disturb the lid while cooking the rice.
