Description

These Crab Stuffed Avocados are a simple and refreshing appetizer or light lunch. Fresh avocado halves are filled with a flavorful mixture of crab meat, red onion, cilantro, and a squeeze of lime juice.


Ingredients

  • 1 medium avocado
  • 2 tablespoons red onion, chopped
  • 3 ounces crab meat
  • 1 lime, juiced
  • 1 tablespoon fresh cilantro, chopped
  • 2 cherry tomatoes, diced
  • 1/2 teaspoon olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Make crab salad: In a small bowl, combine red onion, lime juice, cilantro, tomatoes, olive oil, crab meat, salt, and pepper. Toss to combine.
  2. Prepare avocado: Cut the avocado in half and remove the pit. Peel off the skin. Season with salt and pepper.
  3. Fill and serve: Fill the avocado halves with the crab mixture and serve immediately.

Notes

  • To prevent browning, brush or sprinkle the avocado with lime juice.
