- 2 tablespoons olive oil
- 2 medium carrots, finely chopped
- 2 celery stalks, finely chopped
- 1 medium yellow onion, roughly chopped
- 4 ounces diced pancetta
- 8 cloves of garlic, minced/pressed, or 1 tablespoon garlic paste
- 1 lb lean ground beef (grass-fed)
- 1 lb ground pork
- Kosher salt & freshly ground black pepper, to taste
- 1/2 teaspoon chipotle powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- 1 (6-ounce) can tomato paste
- 1 cup dry red wine (Chianti, Cabernet Sauvignon, or Merlot)
- 1 (14.5-ounce) can diced fire roasted tomatoes
- Herb blend (3-4 sprigs each fresh rosemary & thyme)
- 2 bay leaves
- 2 cups chicken or beef broth
- 1/4 cup freshly grated parmesan cheese, plus more for serving
- 1/4 cup heavy whipping cream
- 32 ounces potato gnocchi (shelf-stable)
Instructions
- Sautรฉ the Mirepoix:
- Heat oil in a Dutch oven.
- Sautรฉ carrots, celery, and onion until tender.
- Add the Flavor Agents:
- Add pancetta, cook until golden.
- Add garlic, cook until fragrant.
- Brown the Meat & Season:
- Add ground beef and pork, break into pieces, cook until browned.
- Season with salt, pepper, chipotle powder, oregano, and paprika.
- Add tomato paste, cook for 1-2 minutes.
- Deglaze the Pot:
- Pour in red wine, scrape up browned bits.
- Cook until wine is mostly absorbed.
- Build the Braise:
- Add diced tomatoes, herb blend, bay leaves, and broth.
- Stir to combine.
- Slow Simmer:
- Reduce heat, cover, and simmer for 1 1/2 โ 2 hours.
- Finish Bolognese Sauce:
- Skim off excess fat.
- Remove herb stems and bay leaves.
- Stir in parmesan cheese and cream.
- Cook Gnocchi:
- Boil salted water, cook gnocchi (undercook by 1 minute).
- Reserve 1/2 cup gnocchi water.
- Assemble Gnocchi Bolognese:
- Transfer gnocchi to Bolognese sauce, toss to coat.
- Adjust sauce consistency with gnocchi water or parmesan cheese.
- Serve:
- Serve in bowls, top with parmesan cheese.
