Description

 Indulge in the comforting flavors of this Cozy Gnocchi Bolognese. A rich and hearty sauce, simmered to perfection with ground beef, pork, and aromatic vegetables, coats tender potato gnocchi for a truly satisfying meal.


Ingredients

  • 2 tablespoons olive oil
  • 2 medium carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 1 medium yellow onion, roughly chopped
  • 4 ounces diced pancetta
  • 8 cloves of garlic, minced/pressed, or 1 tablespoon garlic paste
  • 1 lb lean ground beef (grass-fed)
  • 1 lb ground pork
  • Kosher salt & freshly ground black pepper, to taste
  • 1/2 teaspoon chipotle powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1 (6-ounce) can tomato paste
  • 1 cup dry red wine (Chianti, Cabernet Sauvignon, or Merlot)
  • 1 (14.5-ounce) can diced fire roasted tomatoes
  • Herb blend (3-4 sprigs each fresh rosemary & thyme)
  • 2 bay leaves
  • 2 cups chicken or beef broth
  • 1/4 cup freshly grated parmesan cheese, plus more for serving
  • 1/4 cup heavy whipping cream
  • 32 ounces potato gnocchi (shelf-stable)

Instructions

  1. Sauté the Mirepoix:
    • Heat oil in a Dutch oven.
    • Sauté carrots, celery, and onion until tender.
  2. Add the Flavor Agents:
    • Add pancetta, cook until golden.
    • Add garlic, cook until fragrant.
  3. Brown the Meat & Season:
    • Add ground beef and pork, break into pieces, cook until browned.
    • Season with salt, pepper, chipotle powder, oregano, and paprika.
    • Add tomato paste, cook for 1-2 minutes.
  4. Deglaze the Pot:
    • Pour in red wine, scrape up browned bits.
    • Cook until wine is mostly absorbed.
  5. Build the Braise:
    • Add diced tomatoes, herb blend, bay leaves, and broth.
    • Stir to combine.
  6. Slow Simmer:
    • Reduce heat, cover, and simmer for 1 1/2 – 2 hours.
  7. Finish Bolognese Sauce:
    • Skim off excess fat.
    • Remove herb stems and bay leaves.
    • Stir in parmesan cheese and cream.
  8. Cook Gnocchi:
    • Boil salted water, cook gnocchi (undercook by 1 minute).
    • Reserve 1/2 cup gnocchi water.
  9. Assemble Gnocchi Bolognese:
    • Transfer gnocchi to Bolognese sauce, toss to coat.
    • Adjust sauce consistency with gnocchi water or parmesan cheese.
  10. Serve:
    • Serve in bowls, top with parmesan cheese.
