Chicken:
- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic salt
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper

Sauce:
- 1/4 cup (4 tablespoons) cowboy butter, divided
- 3/4 cup heavy cream
- 1 teaspoon garlic salt
- 1/4 teaspoon crushed red pepper flakes
- 1/2 teaspoon lemon juice
- Lemon slices, for garnish
- Fresh parsley, chopped, for garnish
Instructions
- Cook Pasta: Cook linguine according to package directions in salted boiling water until al dente. Drain and set aside.
- Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with paprika, garlic salt, salt, and pepper. Cook until golden brown and cooked through, adding 2 tablespoons of cowboy butter towards the end of cooking. Remove chicken and set aside.
- Make Sauce: Reduce heat to low. Add remaining cowboy butter, heavy cream, garlic salt, and red pepper flakes to the skillet. Scrape up any browned bits and stir until butter is melted.
- Combine and Serve: Add cooked linguine and chicken to the skillet. Toss to coat in the sauce. Stir in lemon juice. Serve garnished with lemon slices and fresh parsley.
Notes
- If you don’t have cowboy butter, you can substitute with regular butter or a flavored butter of your choice.
- You can adjust the amount of red pepper flakes to your preferred spice level.
- For a richer sauce, you can use heavy cream instead of half and half.
- Serve with a side salad or your favorite vegetables for a complete meal.
