Description

This Cowboy Butter Chicken Linguine is a creamy and flavorful pasta dish with a kick! Tender chicken, linguine, and a rich cowboy butter sauce come together for a quick and satisfying meal that’s perfect for a weeknight dinner.


Ingredients

  • 8 ounces linguine pasta

  • Chicken:

    • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
    • 2 tablespoons extra virgin olive oil
    • 1/2 teaspoon paprika
    • 1/2 teaspoon garlic salt
    • 1/2 teaspoon kosher salt
    • 1/4 teaspoon black pepper
  • Sauce:

    • 1/4 cup (4 tablespoons) cowboy butter, divided
    • 3/4 cup heavy cream
    • 1 teaspoon garlic salt
    • 1/4 teaspoon crushed red pepper flakes
    • 1/2 teaspoon lemon juice
    • Lemon slices, for garnish
    • Fresh parsley, chopped, for garnish

Instructions

  1. Cook Pasta: Cook linguine according to package directions in salted boiling water until al dente. Drain and set aside.
  2. Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with paprika, garlic salt, salt, and pepper. Cook until golden brown and cooked through, adding 2 tablespoons of cowboy butter towards the end of cooking. Remove chicken and set aside.
  3. Make Sauce: Reduce heat to low. Add remaining cowboy butter, heavy cream, garlic salt, and red pepper flakes to the skillet. Scrape up any browned bits and stir until butter is melted.
  4. Combine and Serve: Add cooked linguine and chicken to the skillet. Toss to coat in the sauce. Stir in lemon juice. Serve garnished with lemon slices and fresh parsley.

Notes

  • If you don’t have cowboy butter, you can substitute with regular butter or a flavored butter of your choice.
  • You can adjust the amount of red pepper flakes to your preferred spice level.
  • For a richer sauce, you can use heavy cream instead of half and half.
  • Serve with a side salad or your favorite vegetables for a complete meal.
