- 1 lb boneless, skinless chicken breasts
- Salt, pepper, garlic powder, to taste (for chicken)
- 2/3 cup vegetable oil
- 2 tablespoons butter, divided
- 1 cup all-purpose flour (for breading)
- 2 teaspoons salt
- 2 teaspoons black pepper
- 2 teaspoons paprika
- 2 teaspoons garlic powder
- 2 teaspoons steak seasoning
- 1 cup milk
- 1 large egg
- 1/3 cup reserved frying oil (from cooking chicken)
- 1/3 cup all-purpose flour (for gravy)
- 3 cups milk (for gravy)
- Salt and pepper, to taste (for gravy)
Instructions
- Prep Chicken: Butterfly chicken breasts lengthwise to make them thinner. Season with salt, pepper, and garlic powder.
- Make Breading and Batter: In a shallow dish, combine 1 cup flour, 2 teaspoons each of salt, pepper, paprika, garlic powder, and steak seasoning. In another dish, whisk together 1 cup milk and the egg.
- Bread and Fry Chicken: Dredge chicken in the flour mixture, then the egg mixture, and then back in the flour mixture. Heat โ cup oil and 1 tablespoon butter in a large skillet over medium-high heat. Fry chicken until golden brown and cooked through (internal temperature of 165ยฐF/74ยฐC). Remove chicken and drain on paper towels.
- Make Gravy: Pour off all but โ cup of the frying oil from the skillet. Add โ cup flour to the oil and cook for 1 minute, stirring constantly, to make a roux. Gradually whisk in 3 cups of milk and cook until thickened, stirring constantly. Season with salt and pepper to taste.
- Serve: Serve the fried chicken with the gravy poured over top.
Notes
- You can use bone-in, skin-on chicken pieces if you prefer, but adjust the cooking time accordingly.
- If you don’t have steak seasoning, you can substitute with your favorite all-purpose seasoning blend.
- For a richer gravy, you can use a combination of milk and heavy cream.
