Description

This Cottage Cheese Lasagna is a creamy and cheesy twist on a classic! Tender lasagna noodles are layered with a rich meat sauce, a flavorful cottage cheese mixture, and plenty of melted mozzarella. It’s a hearty and satisfying dish that’s perfect for a family meal or a special occasion.


Ingredients

  • 9 lasagna noodles

  • 2 tablespoons olive oil

  • 1 yellow onion, diced

  • 1 lb ground beef (or ground turkey)

  • 1 lb Italian sausage (or regular sausage), casings removed

  • 5 cloves garlic, minced

  • 1 (14.5 oz) can diced tomatoes, drained

  • 1 (24 oz) jar marinara sauce

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • Cheese Mixture:

    • 16 oz full-fat small curd cottage cheese
    • 5 cups shredded mozzarella cheese, divided
    • 1 large egg
    • 3/4 cup grated Parmesan cheese
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
  • Fresh parsley, for garnish (optional)


Instructions

  1. Preheat and Cook Noodles: Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish. Cook lasagna noodles according to package directions in boiling water with olive oil and salt, reducing cooking time by 2 minutes. Drain and lay flat to dry.
  2. Make Meat Sauce: Heat olive oil in a Dutch oven over medium-high heat. Sauté onions until softened. Add ground beef and sausage; cook until browned, breaking up the meat as it cooks. Stir in garlic, drained tomatoes, marinara sauce, salt, and pepper. Simmer over medium-low heat.
  3. Make Cheese Mixture: In a bowl, combine cottage cheese, 3 cups mozzarella, egg, Parmesan cheese, salt, and pepper.
  4. Assemble Lasagna: Spread a thin layer of meat sauce in the baking dish. Layer 3 lasagna noodles, half of the cottage cheese mixture, and ⅓ of the meat sauce. Repeat layers. Top with remaining noodles and meat sauce, then sprinkle with remaining mozzarella cheese.
  5. Bake: Bake uncovered for 40-45 minutes, or until golden brown and bubbly. If the sauce bubbles over, place the dish on a baking sheet.
  6. Serve: Let cool for at least 20 minutes before serving. Garnish with grated Parmesan cheese and fresh parsley, if desired.

Notes

  • You can use any type of ground meat or sausage you prefer.
  • If you don’t have fresh parsley, you can use dried parsley for garnish.
  • For a vegetarian version, omit the meat and use vegetable broth instead of water when cooking the noodles.
