Description

This Cottage Cheese Lasagna is a creamy and cheesy twist on a classic! Tender lasagna noodles are layered with a rich meat sauce, a flavorful cottage cheese mixture, and plenty of melted mozzarella. Itโ€™s a hearty and satisfying dish thatโ€™s perfect for a family meal or a special occasion.

  • 2 tablespoons olive oil

  • 1 yellow onion, diced

  • 1 lb ground beef (or ground turkey)

  • 1 lb Italian sausage (or regular sausage), casings removed

  • 5 cloves garlic, minced

  • 1 (14.5 oz) can diced tomatoes, drained

  • 1 (24 oz) jar marinara sauce

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • Cheese Mixture:

    • 16 oz full-fat small curd cottage cheese
    • 5 cups shredded mozzarella cheese, divided
    • 1 large egg
    • 3/4 cup grated Parmesan cheese
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
  • Fresh parsley, for garnish (optional)


Instructions

  1. Preheat and Cook Noodles: Preheat oven to 375ยฐF (190ยฐC). Grease a 9ร—13 inch baking dish. Cook lasagna noodles according to package directions in boiling water with olive oil and salt, reducing cooking time by 2 minutes. Drain and lay flat to dry.
  2. Make Meat Sauce: Heat olive oil in a Dutch oven over medium-high heat. Sautรฉ onions until softened. Add ground beef and sausage; cook until browned, breaking up the meat as it cooks. Stir in garlic, drained tomatoes, marinara sauce, salt, and pepper. Simmer over medium-low heat.
  3. Make Cheese Mixture: In a bowl, combine cottage cheese, 3 cups mozzarella, egg, Parmesan cheese, salt, and pepper.
  4. Assemble Lasagna: Spread a thin layer of meat sauce in the baking dish. Layer 3 lasagna noodles, half of the cottage cheese mixture, and โ…“ of the meat sauce. Repeat layers. Top with remaining noodles and meat sauce, then sprinkle with remaining mozzarella cheese.
  5. Bake: Bake uncovered for 40-45 minutes, or until golden brown and bubbly. If the sauce bubbles over, place the dish on a baking sheet.
  6. Serve: Let cool for at least 20 minutes before serving. Garnish with grated Parmesan cheese and fresh parsley, if desired.

Notes

  • You can use any type of ground meat or sausage you prefer.
  • If you donโ€™t have fresh parsley, you can use dried parsley for garnish.
  • For a vegetarian version, omit the meat and use vegetable broth instead of water when cooking the noodles.
