9 lasagna noodles

Cheese Mixture:
- 16 oz full-fat small curd cottage cheese
- 5 cups shredded mozzarella cheese, divided
- 1 large egg
- 3/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper

Fresh parsley, for garnish (optional)
Instructions
- Preheat and Cook Noodles: Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish. Cook lasagna noodles according to package directions in boiling water with olive oil and salt, reducing cooking time by 2 minutes. Drain and lay flat to dry.
- Make Meat Sauce: Heat olive oil in a Dutch oven over medium-high heat. Sauté onions until softened. Add ground beef and sausage; cook until browned, breaking up the meat as it cooks. Stir in garlic, drained tomatoes, marinara sauce, salt, and pepper. Simmer over medium-low heat.
- Make Cheese Mixture: In a bowl, combine cottage cheese, 3 cups mozzarella, egg, Parmesan cheese, salt, and pepper.
- Assemble Lasagna: Spread a thin layer of meat sauce in the baking dish. Layer 3 lasagna noodles, half of the cottage cheese mixture, and ⅓ of the meat sauce. Repeat layers. Top with remaining noodles and meat sauce, then sprinkle with remaining mozzarella cheese.
- Bake: Bake uncovered for 40-45 minutes, or until golden brown and bubbly. If the sauce bubbles over, place the dish on a baking sheet.
- Serve: Let cool for at least 20 minutes before serving. Garnish with grated Parmesan cheese and fresh parsley, if desired.
Notes
- You can use any type of ground meat or sausage you prefer.
- If you don’t have fresh parsley, you can use dried parsley for garnish.
- For a vegetarian version, omit the meat and use vegetable broth instead of water when cooking the noodles.
