For the stuffing:
- 18 to 24 oz. prepared cornbread, cut into 1/2-inch cubes
- 2 tbsp. olive oil
- 1 tbsp. butter
- 1 large onion, chopped
- 4 stalks of celery, sliced
- 1 tsp. salt
- 1/2 tsp. ground black pepper
- 2 1/4 to 2 3/4 cups chicken or vegetable broth
- 3 medium apples, chopped

- Preheat the oven
Preheat your oven to 350ยฐF. This is to prepare for both drying out the cornbread and the final baking of the stuffing. - Dry the cornbread
Spread the cornbread cubes onto two rimmed baking sheets. Bake them in the preheated oven until they are dry and slightly golden, about 15 minutes. This helps to prevent the cornbread from getting soggy in the stuffing. - Prepare the vegetable mixture
Heat olive oil and butter in a 3-quart sauce pot over medium heat. Add the chopped onion, celery, salt, and ground black pepper. Sautรฉ for approximately 5 minutes until the vegetables are slightly tender and translucent. - Combine with apples and broth
