Ingredients
Scale
Dough Ingredients
- 4 3/4 cups bread flour, spooned and leveled off
- 1 teaspoon active dry yeast
- 1 1/2 teaspoons salt
- 1/2 tablespoon granulated sugar
- 6 tablespoons unsalted butter, melted
- 3/4 cup warm water (105°F)
- 1 cup warm milk (105°F)
Herbed Butter Topping
- 4 tablespoons unsalted butter, melted (divided)
- 1 tablespoon dried onion powder
- 1 teaspoon dried oregano
- 2 teaspoons garlic powder
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 3 tablespoons grated Parmesan cheese
Instructions
- Make the Bread Dough: Combine the bread flour, yeast, salt, sugar, melted butter, warm water, and warm milk in a stand mixer bowl fitted with a dough hook. Start mixing on low speed, then increase to high and knead until the dough is smooth and elastic, which can take several minutes.
- First Rise: Transfer the dough to a large greased bowl, cover with plastic wrap, and let it rise in a warm place (such as in the oven on proof setting) for about 1 hour or until it doubles in size.
- Shape the Dough: Roll out the risen dough on a floured surface to dimensions of 18 x 13 inches. Place the rolled dough onto an 18 x 13 inch baking sheet. Using a pizza wheel, cut slits by slicing once down the middle lengthwise and then 10 times crosswise to create 20 breadstick portions.
- Second Rise: Cover the shaped dough again and allow it to rise for another 30 minutes to 1 hour until slightly puffed.
- Prepare Herbed Butter: While the dough rises, mix 2 tablespoons melted butter with dried onion powder, oregano, garlic powder, basil, and salt until well combined.
- Preheat the Oven and Bake: Preheat your oven to 470°F. Before baking, brush the dough surface with the remaining 2 tablespoons of melted butter. Bake the breadsticks for 10 to 12 minutes or until golden brown and cooked through.
- Add Herbed Butter and Parmesan: Immediately after baking, brush the warm breadsticks generously with the prepared herbed butter mixture and sprinkle evenly with grated Parmesan cheese.
- Slice and Serve: Fully separate the breadsticks along the cut lines. Serve warm accompanied by marinara sauce for dipping.
Notes
- Freezing the Dough: Place the shaped dough on a baking sheet in the freezer until frozen solid, then transfer the frozen dough to a ziplock bag. Defrost in the refrigerator overnight and let it rise for 30 minutes before baking.
- Freezing Baked Breadsticks: Cool baked breadsticks completely (without herbed butter and Parmesan). Store in an airtight container or freezer bag. Defrost in the refrigerator overnight and reheat in the oven before brushing with herbed butter and sprinkling Parmesan.
