Description

These Copycat KFC Bowls are a delicious and easy way to enjoy a copycat version of the popular fast food meal. They feature crispy popcorn chicken, creamy mashed potatoes, and a flavorful gravy with corn, all topped with melted cheddar cheese.


Ingredients

  • 1 1/2 pounds frozen popcorn chicken (or chicken nuggets)
  • 4 cups prepared mashed potatoes
  • 1 cup frozen corn kernels, thawed
  • 1 cup prepared beef gravy
  • 1/4 cup shredded cheddar cheese
  • Salt and black pepper, to taste

Instructions

  1. Cook Chicken: Cook the chicken according to package directions. (Air frying is a great option for crispy chicken.)
  2. Prepare Mashed Potatoes: While the chicken is cooking, prepare the mashed potatoes and keep them warm.
  3. Heat Gravy and Corn: In a microwave-safe bowl, combine the thawed corn kernels and beef gravy. Microwave on high for 1-2 minutes, or until heated through. Stir to combine.
  4. Assemble Bowls: To assemble the bowls, divide the warm mashed potatoes evenly among 4 serving bowls. Top each bowl of mashed potatoes with a generous portion of the popcorn chicken. Spoon the corn and gravy mixture over the popcorn chicken in each bowl. Sprinkle shredded cheddar cheese over the top of each bowl.
  5. Melt Cheese: Microwave each bowl for an additional 30-60 seconds, or until the cheese is melted and bubbly.
