Corn Salsa Ingredients

  • 5 small ears of corn (about 3 cups or 510 grams)
  • 1 poblano pepper (65 grams)
  • 1 jalapeño pepper, seeds removed and diced (15 grams)
  • 1/2 cup red onion, diced (80 grams)
  • 1/4 cup cilantro, chopped
  • Juice and zest of 1 large lime (1 fl oz)
  • 1/2 tsp salt

Instructions

  1. Grill the Corn and Poblano Pepper
    Pre-heat your grill to 400°F. Add the ears of corn and the poblano pepper. Grill them for 6-8 minutes or until the corn is tender and lightly charred, turning frequently to ensure even cooking and prevent burning. The poblano pepper should develop a dark char with bubbled skin, which might take longer than the corn.
  2. Prepare the Poblano Pepper
    Once grilled, place the charred poblano pepper in a bowl and cover tightly with plastic wrap. Let it rest for 5-10 minutes. Then, carefully peel or scrape off the skin and dice the pepper.
  3. Trim the Corn Kernels
    Using a small bowl placed upside down in a larger bowl, hold the corn vertically and trim the kernels from the cob. This method catches the kernels neatly without creating a mess.
  4. Mix and Serve
    Combine all the ingredients (corn kernels, diced poblano and jalapeño peppers, onion, cilantro, lime juice and zest, and salt) into a large bowl. Toss gently to mix, and serve fresh.

Notes

  • This recipe yields about 4 cups of salsa, perfect for sharing.
  • If you’re using frozen corn kernels instead of fresh corn on the cob, make sure to thaw the kernels and drain any excess water before mixing them with the other ingredients.
