Description

Delight in these adorable Easter-themed Coconut Macaroons! These sweet, chewy treats are shaped like birds’ nests and topped with colorful mini eggs, making them the perfect springtime dessert or festive holiday treat.

Ingredients

Units Scale
  • 5 1/2 cups sweetened flaked coconut
  • 3/4 cup sweetened condensed milk
  • 1 teaspoon almond extract
  • 2 large egg whites
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate chips
  • 1 package Cadbury mini eggs

Instructions

  1. Preheat and Prepare: Preheat the oven to 325ยฐF. Line two baking sheets with parchment paper. Set aside.
  2. Mix Coconut Base: In a medium bowl, combine the coconut, condensed milk, salt, and almond extract. Stir until thoroughly mixed. Set aside.
  3. Beat Egg Whites: In a large bowl, use an electric mixer to beat the egg whites until stiff peaks form. This will help create a light and airy texture in the macaroons.
  4. Combine Mixtures: Gently fold the beaten egg whites into the coconut mixture, being careful not to deflate the egg whites too much.
  5. Shape Macaroons: Drop the mixture by generous tablespoonfuls about 1 inch apart onto the prepared baking sheets. Press your thumb into the center of each macaroon to form the shape of a nest.
  6. Bake: Place the baking sheets in the preheated oven and bake for 25 minutes, until the macaroons are set and delicately browned.
  7. Cool: Remove the macaroons from the oven and transfer them to a wire rack to cool completely.
  8. Prepare Chocolate: Place the white chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until the chips have melted completely.
  9. Decorate: Drizzle some melted white chocolate into each macaroon nest and place 3 mini eggs on top to complete the bird’s nest look.

Notes

  • Store the macaroons in an airtight container at room temperature for up to 3 days.
  • For a twist, try using dark or milk chocolate chips instead of white chocolate.
  • You can substitute the almond extract with vanilla extract if preferred.
