  • 2 tbsp plain flour
  • 300ml whole milk
  • 200g grated mature cheddar
  • 2 tbsp grated mature cheddar (for topping)

Instructions

  1. Prepare pasta: Heat a large pan of boiling salted water. Add the macaroni and cook according to the package instructions until al dente. Drain well and set aside.
  2. Make cheese sauce: In a large pan over medium heat, melt the butter. Stir in the flour and cook for 3-4 minutes until the mixture looks sandy and develops a slightly nutty aroma. Gradually whisk in the milk thoroughly to eliminate lumps. Let the sauce bubble for a few minutes to thicken, then add the grated cheddar cheese.
