Apple Filling:
- 4 pounds apples, peeled, cored, and sliced to 1/4-inch thickness (1.8kg)
- 2 tablespoons fresh lemon juice
- 1/3 cup packed light brown sugar (73g)
- 1 tablespoon cornstarch
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1/4 cup cold unsalted butter, cut into small cubes (56g)
Topping:
- 2 cups all-purpose flour (240g)
- 1/2 cup granulated sugar (100g)
- 1 tablespoon baking powder
- 1 teaspoon salt
- 3/4 cup whole milk (180ml)
- 1/4 cup unsalted butter, melted (56g)
Instructions
- Preheat Oven: Set your oven to 350°F (175°C) to prepare for baking the cobbler.
- Prepare Apple Filling: In a large mixing bowl, toss the sliced apples with fresh lemon juice to prevent browning. Add brown sugar, cornstarch, cinnamon, nutmeg, and vanilla extract. Mix thoroughly until all ingredients are well combined. Pour this mixture evenly into a 9×13 inch baking dish, then dot the top with the cubed cold unsalted butter.
- Make the Topping: In another large bowl, whisk together the flour, granulated sugar, baking powder, and salt. Add the whole milk and melted butter, stirring with a spatula until the flour is fully moistened and a thick batter forms. Scatter this topping evenly over the apple filling, leaving some apples visible—it does not need to cover completely.
- Bake the Cobbler: Place the baking dish in the preheated oven and bake for 45 minutes or until the topping turns golden brown and the apple filling is bubbling around the edges.
- Cool and Serve: Remove the cobbler from the oven and let it cool for about 10 minutes. This resting period allows the juices to thicken slightly. Serve warm, ideally topped with a scoop of vanilla ice cream.
- Storage: Cover leftovers and refrigerate them; consume within 5 days for best quality.
Notes
- Allow the cobbler to cool for a few minutes before serving to let the apple juices set, ensuring a luscious and velvety texture rather than a runny consistency.
- Using fresh lemon juice helps maintain the apples’ color and adds brightness to the filling.
- This dessert pairs wonderfully with vanilla ice cream or whipped cream.
- Butter in both filling and topping contributes to a rich, buttery flavor and tender texture.
