Instructions
- Preheat and prepare muffin tins: Preheat your oven to 375º F. Spray muffin tins with baking spray or coat well with shortening or butter and lightly dust with flour, then discard any excess flour.
 - Mix dry ingredients: In a medium bowl, sift together 2 cups flour, baking powder, salt, and 2 teaspoons cinnamon. Set this mixture aside.
 - Coat apples: Combine 2 teaspoons of flour with ½ teaspoon cinnamon in a separate bowl. Toss the diced apples in this mixture to coat well and set aside.
 - Cream butter and sugar: In a large bowl, cream the room temperature butter and granulated sugar until lightened in color and fluffy, about 3 minutes. Add eggs one at a time, fully incorporating each before adding the next. Mix in vanilla extract.
 - Combine batter: Gently fold the dry flour mixture into the creamed butter and eggs alternately with the milk, stirring just until blended. Then fold in the coated diced apples carefully.
 - Fill muffin tins and bake: Scoop the batter into the prepared muffin tins, filling each about 2/3 to 3/4 full. Bake for about 30 minutes or until a toothpick inserted in the center comes out clean.
 - Prepare topping while baking: Melt butter and allow to cool slightly. In a separate bowl, mix granulated sugar and ground cinnamon for topping.
 - Finish muffins: After baking, allow muffins to cool slightly in the pan. Remove muffins, then brush or dip the tops into the melted butter and then into the cinnamon sugar mixture. Place on a plate to finish cooling.
