  • 1 cup (approximately 1 large) red apple, peeled and roughly chopped
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 120 ml (1/2 cup) vegetable oil or flavorless oil
  • 120 ml (1/2 cup) Greek yogurt

For the Cinnamon Topping:

  • 50 grams (1/4 cup) caster sugar or granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter, melted

For the Sugar Glaze:

  • 30 grams (1/4 cup) icing sugar or powdered sugar, sifted
  • 1โ€“2 tablespoons milk

Instructions

  1. Preheat oven: Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper.
  2. Mix dry ingredients: In a large mixing bowl, combine flour, baking powder, baking soda, salt, and sugar. Add chopped apple and stir briefly.
  3. Mix wet ingredients: In a separate bowl, whisk together eggs, vanilla, oil, and yogurt.
  4. Combine wet and dry: Add wet ingredients to dry ingredients and mix gently until just combined. Spoon batter into the prepared pan.
  5. Make cinnamon topping: Mix sugar, cinnamon, and butter until lumpy. Sprinkle over the cake batter.
  6. Bake: Bake for 30-35 minutes until a skewer comes out clean. Cool on a wire rack.
  7. Prepare glaze: Mix sugar and milk to make the glaze. Drizzle over the cooled cake.
