  • 2 cups almond flour*
  • 1/4 cup sunflower seed butter
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 2-3 tablespoons water

Chocolate Topping

  • 1 1/4 cups dark chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Pit and Process Dates: Pit the dates and place them in a food processor. Add almond flour, sunflower seed butter, vanilla extract, salt, and 2 tablespoons of water. Pulse until a cookie dough texture forms.
  2. Adjust Consistency: Add more water if needed to achieve a sticky yet moldable dough.
  3. Press into Pan: Press the dough into a parchment-lined 8×8 baking pan.
  4. Melt Chocolate: Melt dark chocolate chips and coconut oil together.
  5. Top and Chill: Pour the melted chocolate over the dough, smooth it out, and refrigerate for 30 minutes until set.
