Fresh Date Cookie Dough
- 2 cups fresh dates
- 2 cups almond flour*
- 1/4 cup sunflower seed butter
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 2-3 tablespoons water
Chocolate Topping
- 1 1/4 cups dark chocolate chips
- 1 teaspoon coconut oil
Instructions
- Pit and Process Dates: Pit the dates and place them in a food processor. Add almond flour, sunflower seed butter, vanilla extract, salt, and 2 tablespoons of water. Pulse until a cookie dough texture forms.
- Adjust Consistency: Add more water if needed to achieve a sticky yet moldable dough.
- Press into Pan: Press the dough into a parchment-lined 8×8 baking pan.
- Melt Chocolate: Melt dark chocolate chips and coconut oil together.
- Top and Chill: Pour the melted chocolate over the dough, smooth it out, and refrigerate for 30 minutes until set.
- Slice and Enjoy: Once set, slice into bars and store in the fridge.
Notes
- You may substitute sunflower seed flour for a nut-free version.
