- 1 lb ground beef
- 1 onion, chopped
- 1 tablespoon minced garlic
- 1 tablespoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon onion powder
- 1/2 teaspoon ground cumin
- 1 (15.5 oz) can chili beans, undrained
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 1/2 cups beef broth
- 1 (8 oz) can tomato sauce
- 1 cup long-grain white rice, rinsed
- 1 1/2 cups shredded cheddar cheese
- Optional toppings: jalapeรฑos, sour cream, hot sauce
Instructions
- Brown Beef and Season: In a large skillet over medium-high heat, brown ground beef with chopped onion. Season with salt, pepper, paprika, chili powder, onion powder, and cumin. Drain excess grease.
- Add Remaining Ingredients: Stir in minced garlic, diced tomatoes, chili beans, beef broth, tomato sauce, and rinsed rice.
- Simmer: Bring to a boil, then reduce heat to medium-low, cover, and simmer for about 20 minutes, or until rice is cooked through.
- Melt Cheese: Top with shredded cheddar cheese and place in the oven to melt (or cover and let sit on the stovetop until melted).
- Serve: Serve hot with your favorite toppings, such as jalapeรฑos, sour cream, and hot sauce.
Notes
- You can substitute ground turkey or chicken for the ground beef.
- If you don’t have chili beans, you can use kidney beans or pinto beans.
- For a spicier dish, add more chili powder or a pinch of cayenne pepper.
