Description

This Chili Rice Skillet Meal is a hearty and flavorful one-pan dish that’s perfect for a quick weeknight dinner! Ground beef, rice, beans, and a medley of spices come together in this satisfying and easy-to-make meal.


Ingredients

  • 1 onion, chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1 (15.5 oz) can chili beans, undrained
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 1/2 cups beef broth
  • 1 (8 oz) can tomato sauce
  • 1 cup long-grain white rice, rinsed
  • 1 1/2 cups shredded cheddar cheese
  • Optional toppings: jalapeรฑos, sour cream, hot sauce

Instructions

  1. Brown Beef and Season: In a large skillet over medium-high heat, brown ground beef with chopped onion. Season with salt, pepper, paprika, chili powder, onion powder, and cumin. Drain excess grease.
  2. Add Remaining Ingredients: Stir in minced garlic, diced tomatoes, chili beans, beef broth, tomato sauce, and rinsed rice.
  3. Simmer: Bring to a boil, then reduce heat to medium-low, cover, and simmer for about 20 minutes, or until rice is cooked through.
  4. Melt Cheese: Top with shredded cheddar cheese and place in the oven to melt (or cover and let sit on the stovetop until melted).
  5. Serve: Serve hot with your favorite toppings, such as jalapeรฑos, sour cream, and hot sauce.

Notes

  • You can substitute ground turkey or chicken for the ground beef.
  • If you don’t have chili beans, you can use kidney beans or pinto beans.
  • For a spicier dish, add more chili powder or a pinch of cayenne pepper.
