Scale
- 1 1/2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- 5 cloves garlic, minced
- 2 tablespoons dried oregano
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/4 cup olive oil
- 3 tablespoons lemon juice (from 1 lemon)
- Wooden skewers (soaked in water for 1-2 hours)
Instructions
- Marinate Chicken: Combine chicken, garlic, oregano, salt, pepper, olive oil, and lemon juice in a large freezer bag or airtight container. Marinate in the refrigerator for at least 2 hours, or up to overnight.
- Soak Skewers: Soak wooden skewers in water for 1-2 hours to prevent them from burning on the grill.
- Assemble Skewers: Preheat grill to medium-high heat. Thread marinated chicken onto skewers, leaving about ½ inch of space at each end.
- Grill: Grill skewers for about 3 minutes per side, or until chicken is cooked through.
- Rest and Serve: Transfer skewers to a plate and let the chicken rest for 5 minutes before serving.
Notes
- Leftovers can be stored in the refrigerator for 3-4 days.
- To make ahead, freeze marinated raw chicken in a single layer in a freezer bag for up to 9 months. Thaw overnight in the refrigerator before cooking.
- For best results, ensure chicken is fully thawed before grilling.
