Description

This Chicken Souvlaki recipe brings the taste of Greece to your kitchen! Tender chicken pieces are marinated in a flavorful blend of lemon, garlic, and herbs, then grilled to perfection. These skewers are perfect for a quick and easy meal or a fun appetizer for your next gathering.

Ingredients

Units Scale
  • 1 1/2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 5 cloves garlic, minced
  • 2 tablespoons dried oregano
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice (from 1 lemon)
  • Wooden skewers (soaked in water for 1-2 hours)

Instructions

  1. Marinate Chicken: Combine chicken, garlic, oregano, salt, pepper, olive oil, and lemon juice in a large freezer bag or airtight container. Marinate in the refrigerator for at least 2 hours, or up to overnight.
  2. Soak Skewers: Soak wooden skewers in water for 1-2 hours to prevent them from burning on the grill.
  3. Assemble Skewers: Preheat grill to medium-high heat. Thread marinated chicken onto skewers, leaving about ½ inch of space at each end.
  4. Grill: Grill skewers for about 3 minutes per side, or until chicken is cooked through.
  5. Rest and Serve: Transfer skewers to a plate and let the chicken rest for 5 minutes before serving.

Notes

  • Leftovers can be stored in the refrigerator for 3-4 days.
  • To make ahead, freeze marinated raw chicken in a single layer in a freezer bag for up to 9 months. Thaw overnight in the refrigerator before cooking.
  • For best results, ensure chicken is fully thawed before grilling.
