These healthy and delicious chicken nuggets are made with ground chicken and cauliflower rice for a lighter, lower-carb option. They’re easy to make in the oven or air fryer and perfect for kids and adults alike!

Main Ingredients
- 1 1/2 lbs 93% lean ground chicken (organic preferred, not breast only)
- 2/3 cup frozen cauliflower rice
- 1 large egg (beaten)
- 3/4 cup seasoned breadcrumbs (or gluten-free seasoned crumbs*)
Spices
- 1 teaspoon kosher salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/4 teaspoon black pepper

Instructions
- Combine Ingredients: In a large bowl, combine ground chicken, cauliflower rice, salt, onion powder, garlic powder, and black pepper. Mix well.
- Form Nuggets: Shape the mixture into 30 round, flat nuggets, about 25 grams each.
- Bread Nuggets: Dip each nugget in the beaten egg, then coat in breadcrumbs.
Baking Instructions
- Preheat and Prep: Preheat oven to 450°F. Place nuggets on a baking sheet sprayed with oil.
- Bake: Bake for 10 minutes, then flip and bake for another 6 minutes, or until golden brown and cooked through. Spray with oil as needed for crispiness.
Air Fryer Instructions
- Air Fry: Place nuggets in a single layer in the air fryer basket. Spray with oil. Air fry at 400°F for 8-9 minutes, flipping halfway and spraying with oil again, until golden brown and cooked through.
Serve: Serve with your favorite dipping sauces.
Notes
- Leftovers can be stored in the refrigerator for up to four days.
- To freeze, bake or air fry the nuggets, let them cool, then flash freeze on a sheet pan until solid. Transfer to an airtight container and freeze for up to 3 months.
- To reheat, bake in a preheated 400°F oven for 11-15 minutes or air fry at 360°F for 7-8 minutes.
