- 1 large egg
- 1/2 cup Italian seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat and prep: Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
- Combine ingredients: In a medium bowl, combine ground chicken, egg, breadcrumbs, Parmesan cheese, olive oil, garlic, onion powder, salt, and pepper. Mix with your hands until just combined.
- Shape meatballs: Grease your hands. Use a tablespoon-sized cookie scoop to form 24 meatballs. Place on the prepared baking sheet.
- Bake: Bake for 15 minutes. Turn oven to broil and cook on the top rack until meatballs are golden brown and reach an internal temperature of 165°F (74°C). Watch carefully to prevent burning.
