Description

These Chicken Meatballs are a healthy and delicious option for a quick and easy meal. They are made with simple ingredients, including ground chicken, Italian breadcrumbs, and Parmesan cheese, and baked to juicy perfection.

Ingredients

Units Scale
  • 1 pound ground chicken
  • 1 large egg
  • 1/2 cup Italian seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat and prep: Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
  2. Combine ingredients: In a medium bowl, combine ground chicken, egg, breadcrumbs, Parmesan cheese, olive oil, garlic, onion powder, salt, and pepper. Mix with your hands until just combined.
  3. Shape meatballs: Grease your hands. Use a tablespoon-sized cookie scoop to form 24 meatballs. Place on the prepared baking sheet.
  4. Bake: Bake for 15 minutes. Turn oven to broil and cook on the top rack until meatballs are golden brown and reach an internal temperature of 165°F (74°C). Watch carefully to prevent burning.
  5. Serve: Remove from oven and serve as desired.

Notes

  • Serving suggestions: Serve these meatballs with your favorite pasta sauce, in a sub sandwich, or as an appetizer with dipping sauce.
  • Make ahead: Meatballs can be made ahead of time and stored in the refrigerator for up to 3 days or frozen for longer storage.
  • Variations: Add different herbs and spices to the mixture, such as parsley, oregano, or red pepper flakes.
