Description

  • Marinade:

    • 1 tablespoon ground cumin
    • 1 tablespoon dried oregano
    • 1 tablespoon smoked paprika

  • Toppings:

    • 4 pita breads
    • 1/4 cup tzatziki sauce
    • 1/2 red onion, thinly sliced
    • 1/2 cup cherry tomatoes, halved

Instructions

  1. Marinate Chicken: Combine chicken thighs and marinade ingredients in a large freezer bag. Seal the bag and massage to coat the chicken evenly. Marinate in the refrigerator for 1-4 hours (or up to 24 hours).
  2. Cook Chicken: Preheat oven to 425ยฐF (220ยฐC). Place chicken on a baking sheet lined with a roasting rack. Bake for 15-18 minutes, or until cooked through and slightly crispy. For extra crispiness, broil for 2-3 minutes. Alternatively, grill or pan-fry the chicken.
  3. Assemble Gyros: Roughly chop the cooked chicken into bite-sized pieces. Warm the pita breads in the microwave or a dry skillet. Fill each pita with chicken, tzatziki sauce, sliced onions, and halved cherry tomatoes.

Notes

  • Marinate the chicken for at least 1 hour, but longer marinating times will result in more flavorful chicken.
