- 1 tablespoon water
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
-
For the Stir Fry:

- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon cornstarch (optional, for thickening)
- 2 green onions, sliced (for garnish)
- 1 tablespoon sesame seeds, for garnish
Instructions
- Velvet Chicken: Combine chicken with baking soda, cornstarch, water, soy sauce, and sesame oil in a bowl. Marinate for 15-20 minutes. Rinse chicken under cold water and pat dry.
- Make Sauce: In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, rice vinegar, and cornstarch (if using).
- Stir-fry Chicken: Heat 1 tablespoon sesame oil in a skillet or wok over medium-high heat. Stir-fry chicken until cooked through and lightly browned. Remove and set aside.
- Stir-fry Vegetables: Add remaining sesame oil to the skillet. Sauté garlic and ginger until fragrant. Add frozen green beans and stir-fry until heated through and slightly tender.
- Combine and Finish: Return chicken to the skillet. Pour sauce over and stir-fry until thickened.
- Serve: Garnish with green onions and sesame seeds. Serve hot.
Notes
- Velveting the chicken helps to tenderize it and give it a silky texture.
- Use frozen green beans straight from the freezer for convenience and to maintain their crisp-tender texture.
- Adjust the sauce to your liking by adding more hoisin sauce for sweetness or soy sauce for saltiness.
