- 2 tablespoons olive oil, divided
- 2 tablespoons fajita seasoning
- 3 boneless, skinless chicken breasts, cut into long strips
- 1 medium red bell pepper, cut into long strips
- 1 medium green bell pepper, cut into long strips
- 2 large onions, sliced
- 2 tablespoons butter
- 1 cup shredded Tex-Mex cheese or cheddar cheese
- 8 tortillas (flour or corn)
- Salsa, for serving
- Sour cream, for serving
Instructions
- Cook Chicken: Season chicken strips with 1 tablespoon fajita seasoning. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook chicken until browned and cooked through. Remove chicken and wipe the skillet clean.
- Sautรฉ Vegetables: Heat remaining olive oil in the skillet. Sautรฉ onions until softened. Add bell peppers and remaining fajita seasoning. Cook until slightly softened. Return chicken to the skillet and cook for 1 minute.
- Assemble Quesadillas: Melt butter in a separate skillet over medium heat. Add one tortilla and cook until lightly browned. Flip and top with chicken and vegetable mixture, cheese, and another tortilla. Cook until golden brown on both sides. Repeat with remaining tortillas.
- Serve: Cut quesadillas into quarters and serve with salsa and sour cream.
