- 2 medium bell peppers, cut into strips
- 1 medium yellow onion, sliced

- Fresh chopped cilantro, for garnish (optional)
Instructions
- Preheat and Season: Preheat oven to 400°F (200°C). In a baking dish, season chicken breasts with fajita seasoning and vegetable oil. Make sure the seasoning is evenly distributed.
- Top and Bake: Arrange bell pepper strips and onion slices over the chicken. Sprinkle with a little more fajita seasoning and top with shredded cheese. Bake uncovered for 25-30 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
- Serve: Serve immediately, garnished with fresh cilantro, if desired.
