Description

This Chicken Fajita Casserole is a quick and easy one-pan meal that’s perfect for busy weeknights! Tender chicken breasts, colorful bell peppers, and onions are baked in a flavorful fajita seasoning with a cheesy topping. It’s a simple and satisfying dish that’s ready in just 40 minutes.

Ingredients

Units Scale
  • 1 1/2 pounds boneless, skinless chicken breasts
  • 2 tablespoons fajita seasoning
  • 1 tablespoon vegetable oil
  • 2 medium bell peppers, cut into strips
  • 1 medium yellow onion, sliced
  • 1 1/2 cups shredded cheese (any type)
  • Fresh chopped cilantro, for garnish (optional)

Instructions

  1. Preheat and Season: Preheat oven to 400°F (200°C). In a baking dish, season chicken breasts with fajita seasoning and vegetable oil. Make sure the seasoning is evenly distributed.
  2. Top and Bake: Arrange bell pepper strips and onion slices over the chicken. Sprinkle with a little more fajita seasoning and top with shredded cheese. Bake uncovered for 25-30 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  3. Serve: Serve immediately, garnished with fresh cilantro, if desired.

Notes

  • To ensure chicken is cooked through, check the internal temperature with a meat thermometer.
  • For a lower-calorie version, omit the cheese or replace it with a sprinkle of Parmesan cheese mixed with panko breadcrumbs.
  • To cook the casserole faster, cut the chicken into smaller pieces and reduce the cooking time.
  • You can add cooked pasta to the casserole for a heartier meal.
  • Serve with rice, pasta, or cauliflower rice.
  • Reheat leftovers in the oven or microwave.
