  • 6 slices Swiss cheese
  • 6 slices deli ham
  • Canola oil, for frying

  • 1 cup breadcrumbs
  • 2 teaspoons chopped fresh parsley
  • 1/2 teaspoon Montreal steak seasoning
  • 1 cup all-purpose flour
  • 3 large eggs, beaten

Instructions

  1. Prep Chicken: Season chicken breasts with salt, pepper, and garlic powder. Place each breast between two sheets of plastic wrap and pound to ½-inch thickness.
  2. Fill and Roll: Layer one slice of Swiss cheese, one slice of ham, another slice of Swiss, and another slice of ham on each chicken breast. Tightly roll up each chicken breast and wrap in plastic wrap. Twist the sides to secure and refrigerate for 30 minutes.
  3. Make Breading: Preheat 2 inches of canola oil in a skillet to 350°F (177°C). Pulse crispy fried onions in a food processor until finely ground. In a bowl, combine ground onions, breadcrumbs, parsley, and Montreal steak seasoning.
  4. Bread Chicken: Set up a breading station with flour in one bowl and beaten eggs in another. Dredge each chicken roll in flour, then egg, and finally the breadcrumb mixture.
  5. Fry Chicken: Carefully place breaded chicken in the hot oil and cook for about 7 minutes per side, or until golden brown and the internal temperature reaches 165°F (74°C).
