Ground chicken is combined with herbs, spices, and cheese, then rolled up with ham and Swiss cheese like a cordon bleu. Baked to perfection and topped with a creamy sauce, itโ€™s a delicious and satisfying meal thatโ€™s perfect for a family dinner or a special occasion.

  • For the Meatloaf:

    • 2 lbs ground chicken
    • 1/2 small yellow onion, finely diced
    • 3 cloves garlic, minced
    • 1 large egg, beaten
    • 1 tablespoon Dijon mustard
    • 1/2 cup Parmesan cheese, finely grated
    • 2 tablespoons fresh parsley, chopped
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 cup panko breadcrumbs, divided
    • 6 slices Black Forest ham
    • 6 slices Swiss cheese
    • 2 tablespoons melted butter
  • For the Sauce:

    • 2 tablespoons butter
    • 2 tablespoons all-purpose flour
    • 1 1/2 cups milk
    • 2 tablespoons Dijon mustard
    • 1/3 cup Parmesan cheese, finely grated
    • Salt and pepper to taste

Instructions

  1. Preheat and Prep: Preheat oven to 350ยฐF (177ยฐC). Grease a loaf pan.
  2. Make Meatloaf Mixture: In a bowl, combine ground chicken, onion, garlic, egg, Dijon mustard, Parmesan cheese, parsley, salt, pepper, and ยผ cup breadcrumbs. Mix well.
  3. Assemble and Roll: Place the mixture on parchment paper and flatten into a rectangle. Layer with ham and Swiss cheese. Use the paper to roll the meat into a log. Transfer to the prepared pan, seam-side down.
  4. Top and Bake: Mix remaining breadcrumbs with melted butter and a pinch of salt. Sprinkle over the meatloaf. Bake for 75 minutes, or until a thermometer inserted into the center reads 165ยฐF (74ยฐC).
  5. Make Sauce: While the meatloaf bakes, melt butter in a saucepan. Whisk in flour and cook for 1 minute. Gradually whisk in milk and cook until thickened. Whisk in Dijon mustard and Parmesan cheese until melted. Season with salt and pepper.
  6. Serve: Let meatloaf rest for a few minutes before slicing and serving with the prepared sauce.

Notes

  • You can use ground turkey or a combination of ground chicken and turkey instead of just chicken.
  • If you donโ€™t have panko breadcrumbs, you can use regular breadcrumbs.
  • For a richer flavor, you can use a combination of Gruyรจre cheese and Swiss cheese for the filling.
