Description

This Chicken Caesar Pasta Salad is a refreshing and satisfying meal that’s perfect for lunch, dinner, or a potluck! Al dente pasta is combined with tender chicken, crisp romaine lettuce, juicy tomatoes, crunchy croutons, and a creamy homemade Caesar dressing.

Ingredients

Units Scale
  • 8 ounces whole wheat fusilli pasta (or your favorite pasta shape)
  • 12 ounces cooked chicken breast, cut into bite-sized pieces
  • 1 romaine lettuce heart, chopped (about 8 ounces)
  • 1 pint cherry or grape tomatoes, halved
  • 3/4 cup croutons
  • 1/3 cup freshly grated Parmesan cheese
  • 1 batch Homemade Caesar Dressing

Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil. Cook pasta al dente according to package directions. Drain, rinse with cold water, and set aside to cool.
  2. Prepare Chicken: Cook chicken breast using your preferred method (Instant Pot, slow cooker, or oven). Cut into bite-sized pieces.
  3. Make Caesar Dressing: Prepare the Homemade Caesar Dressing (if not already made).
  4. Assemble Salad: In a large serving bowl, combine cooled pasta, chicken, romaine lettuce, tomatoes, croutons, and Parmesan cheese.
  5. Dress and Serve: Drizzle with Caesar dressing and toss to combine. Serve cold or at room temperature.

Notes

  • Chicken Cooking Options:
    • Instant Pot: Use an Instant Pot chicken recipe.
    • Slow Cooker: Use a slow cooker shredded chicken recipe.
    • Oven: Bake chicken breasts.
  • Make Ahead: This salad can be made 1 day in advance.
  • Storage: Best eaten the day it’s made, but leftovers can be refrigerated for 2-3 days.
  • Leftover Tip: Toss leftovers with extra Caesar dressing or a squeeze of lemon juice to prevent drying out.
