Cheese Filling
- 15 oz. ricotta cheese
- 1 large egg
- 2 cups mozzarella cheese
- ½ cup Parmesan cheese (freshly grated)
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon dried basil
- ½ teaspoon dried parsley
- ¼ teaspoon pepper
Sauce and Meat
- 1 tablespoon olive oil
- 1 small yellow onion (diced)
- ½ lb. ground beef
- ½ lb. ground Italian sausage (hot or mild)
- 3 cloves garlic (minced)
- ½ cup chicken broth
- 32 oz. marinara sauce
- 1 teaspoon Worcestershire sauce (optional)
- 1 teaspoon hot sauce (optional)
Other
- 12 lasagna noodles (plus extra in case of breakage)
- 1.5 cups mozzarella cheese (for topping)
Instructions
- Prepare Cheese Filling: In a medium bowl, combine ricotta cheese, egg, 2 cups mozzarella, Parmesan, oregano, salt, basil, parsley, and pepper. Mix well and set aside.
- Prepare Baking Dish and Oven: Spread ½ cup marinara sauce on the bottom of a 9 x 13-inch baking dish. Preheat oven to 375°F (190°C).
- Cook Onions: Heat olive oil over medium heat in a skillet or saucepan. Add diced onions and cook for about 10 minutes until softened and slightly caramelized, balancing tomato acidity.
- Cook Meat: Add ground beef and Italian sausage to the onions. Increase heat to medium-high and crumble meat finely with a spatula. Cook for 8-10 minutes until fully cooked. Add minced garlic during the last minute. Drain excess grease.
- Make Sauce: Add chicken broth and use a spatula to scrape any browned bits from the pan. Stir in remaining marinara sauce, Worcestershire sauce, and hot sauce if using. Bring to a boil, then reduce heat to simmer gently.
- Cook Lasagna Noodles: While sauce simmers, boil salted water in a large pot. Cook noodles according to package instructions until al dente. Drain and rinse with cold water to stop cooking and cool noodles for handling.
- Assemble Roll Ups: Lay noodles out on parchment or wax paper. Spread approximately 2½ tablespoons of cheese filling evenly over each noodle.
- Add Sauce to Noodles: Spread ¼ cup sauce over each cheese-topped noodle, using about 3 cups total, reserving the rest of the sauce.
- Roll and Arrange: Roll noodles tightly while keeping filling inside, place seam-side down in prepared baking dish. Repeat for all noodles.
- Add Remaining Sauce and Cheese: Pour remaining meat sauce over rolled noodles. Sprinkle with 1.5 cups mozzarella cheese evenly over the top.
- Cover and Bake: Spray foil with nonstick cooking spray and place spray-side-down over the baking dish to prevent cheese from sticking. Bake for 35 minutes at 375°F.
- Optional Broil: For a browned top, remove foil and broil at 450°F for a few minutes, watching carefully to avoid burning.
- Serve: Remove from oven and garnish with fresh parsley before serving.

- Covering the baking dish with foil sprayed with nonstick spray prevents the cheese from sticking to the foil.
- You can adjust the hot sauce and Worcestershire sauce according to your spice preference or omit if desired.
