Description

These Cheesy Ground Beef Quesadillas are a quick and easy meal thatโ€™s perfect for a casual dinner or a fun snack! Flour tortillas are filled with a savory ground beef mixture, plenty of melted cheese, and your favorite toppings.


Ingredients

  • 1/2 teaspoon olive oil (or other cooking oil)
  • 1/4 onion, diced
  • 1 pound ground beef (90/10 lean or 80/20)
  • 2 tablespoons taco seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1 tablespoon tomato paste
  • 1/2 cup salsa
  • 1 cup frozen corn
  • 8-inch flour tortillas
  • 3 cups shredded cheddar cheese or Monterey Jack cheese

Instructions

  1. Brown Beef and Sautรฉ Onions: Heat olive oil in a skillet over medium-high heat. Add diced onion and sautรฉ until softened and lightly browned. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess grease.
  2. Make Filling: Reduce heat to low. Add taco seasoning, garlic powder, paprika, salt, tomato paste, salsa, and frozen corn to the skillet. Increase heat to medium-high and cook until liquid is absorbed and corn is heated through.
  3. Assemble Quesadillas: Place a tortilla on a cutting board. Sprinkle with cheese, top with the beef mixture, and add more cheese. Fold the tortilla in half. Repeat with remaining tortillas.
  4. Cook Quesadillas: Heat a clean skillet over medium-high heat and lightly grease with cooking spray. Cook each quesadilla until golden brown on both sides.
  5. Serve: Slice each quesadilla in half and serve hot.

Notes

  • For 80/20 ground beef, drain well and blot with paper towels to remove excess grease.
  • You can use any type of cheese you like, such as cheddar, Monterey Jack, or a blend.
  • Feel free to add your favorite toppings, such as sour cream, guacamole, or salsa.
