Ingredients
Scale
Filling
- 1 (16-oz) can BUSH’S® Traditional Refried Beans
- 1/2 cup chunky salsa
- 1/4 medium onion, diced
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon kosher salt, plus more to taste
- 1/4 teaspoon freshly ground black pepper
Cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
Assembly
- 4 (10-inch) flour tortillas (burrito-sized)
Instructions
- Preheat the Oven: Heat your oven to 375°F and line a small baking sheet with parchment paper. This prepares the baking surface for even cooking and easy cleanup.
- Prepare the Bean Mixture: In a medium bowl, combine the refried beans, chunky salsa, diced onion, smoked paprika, garlic powder, kosher salt, and freshly ground black pepper. Stir well until everything is fully mixed. Taste and adjust seasoning with additional salt if needed.
- Mix the Cheese: In a separate medium bowl, toss together the shredded cheddar and Monterey Jack cheeses until evenly blended.
- Assemble Burritos: Lay one tortilla flat and evenly spread about 1/4 cup of the cheese mixture in the center. Layer 1/2 cup of the bean mixture over the cheese. Fold the bottom edge of the tortilla up over the filling, then fold the sides inward before rolling the tortilla up tightly from the bottom to enclose the filling.
- Bake the Burritos: Place the rolled burritos seam-side down on the prepared baking sheet. Bake in the preheated oven for 12 minutes until the cheese is melted and the tortillas are warmed through and slightly crisp.
- Serve: Remove from the oven and serve the burritos hot with optional sides like guacamole, sour cream, and your favorite hot sauce for added flavor and creaminess.
Notes
- Tortillas: You can use store-bought or homemade flour tortillas, just make sure they are 10 inches in diameter to hold the filling properly.
- Cheese Variations: The recipe uses a 50/50 blend of cheddar and Monterey Jack for balanced flavor and meltability. Feel free to use one cheese type if you prefer.
- Alternative Cooking Method: If you prefer not to bake, you can toast the burritos on the stovetop. Heat a skillet over medium-high heat, place the burritos seam side down, and cook until each side is toasted and the filling is heated through.
