For the Potato Crust
- 16-ounce bag shredded hash browns, frozen
- 1 tablespoon oil
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
For the Butternut Squash Cheese Sauce
- 1/2 cup milk
- 1 cup (5 ounces) finely diced butternut squash
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
- 3/4 cup (3 ounces) shredded sharp cheddar cheese
For the Burger Meat Filling
- 1 medium onion, very finely diced
- 1 lb. ground beef
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 2 tablespoons ketchup
- 1 tablespoon mustard
- 1 teaspoon cornstarch
- 1/2 cup beef broth
Instructions
- Prepare the Potato Crust
Preheat your oven to 400ยฐF. Lightly oil a 9-inch pie dish, and pour the frozen hash browns into it. Sprinkle the hash browns with oil, 1 teaspoon of salt, and black pepper. Toss lightly to combine, then bake on the lower oven rack for 20 minutes. Remove from the oven and, using a spoon, carefully form the hash browns into a crust by pressing them against the edges and bottom of the dish. Bake again for an additional 20 minutes or until fully cooked through. - Make the Butternut Squash Cheese Sauce
In a small pot, combine milk, diced butternut squash, garlic powder, and black pepper. Cook over medium-low heat until the squash becomes tender, about 10-12 minutes. Be sure the mixture doesnโt boil over. Once tender, carefully puree the mixture with an immersion blender or a vented stand blender, then return it to the pot. Add the shredded cheddar cheese and whisk until fully melted and smooth. - Cook the Burger Meat Filling
Heat a skillet over medium-high heat and cook the ground beef until no longer pink. Add the diced onions, remaining salt, garlic powder, ketchup, and mustard. Cook for an additional 3 minutes, then stir in the cornstarch. Deglaze the skillet with the beef broth, cooking for 1 more minute. Taste and adjust seasoning as needed before turning off the heat. - Assemble and Bake
Transfer the cooked ground beef mixture into the prepared potato crust. Pour the butternut squash cheese sauce on top, smoothing it out. If desired, sprinkle some extra shredded cheddar cheese on top. Bake for 15 minutes, or until the cheese is melty and golden. Allow the pie to cool for 5-10 minutes before serving.
