Description

This Cheeseburger Macaroni is a quick and easy one-pot meal that’s perfect for busy weeknights. It combines the flavors of a cheeseburger with tender macaroni in a creamy, cheesy sauce.


Ingredients

  • 2 1/2 cups low-sodium chicken broth (or beef broth)
  • 2 teaspoons Dijon mustard
  • 1/3 cup ketchup
  • 2 tablespoons tomato paste
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 2 teaspoons extra-virgin olive oil
  • 1 pound lean ground beef
  • 1 medium sweet onion, diced
  • 1/4 teaspoon crushed red pepper flakes
  • 2 cups uncooked macaroni
  • 1 cup shredded cheddar cheese
  • Chopped parsley, for garnish (optional)

Instructions

  1. Make Sauce: In a medium bowl, whisk together the broth, mustard, ketchup, tomato paste, garlic powder, and salt. Set aside.
  2. Brown Beef and Onions: In a large skillet over medium-high heat, warm the olive oil. Brown the beef and onions, breaking apart the meat, until the onions are soft, and the meat is cooked through, about 3 minutes. Add the red pepper flakes and combine. Drain off grease and return the pan to heat.
  3. Add Sauce and Pasta: Give your broth mixture a quick stir and pour it into the meat. Bring to a boil and add the macaroni.
  4. Simmer: Reduce the heat to medium, and cover. Continue cooking for 10-12 minutes, until the pasta is tender, stirring a few times to make sure the pasta isn’t sticking to the bottom of the pan.
  5. Add Cheese and Serve: When the macaroni is done, sprinkle the grated cheese on top. Stir until melted, about 1 minute, and serve immediately. Garnish with chopped parsley, if desired.
