  • 1 tablespoon olive oil
  • 1/2 yellow onion, diced
  • 1 lb ground turkey (93/7 lean) – can substitute with ground beef
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1/2 cup ketchup
  • 1/4 cup mustard
  • 1/4 cup nonfat plain Greek yogurt
  • 1/2 cup chopped pickles
  • 1 cup shredded lite cheddar cheese, divided
  • 3 large eggs

Instructions

  1. Preheat and Prep: Preheat oven to 400°F (200°C). Grease a 9×9 inch baking dish. Cook spaghetti squash according to your preferred method and shred the flesh with a fork.
  2. Brown Meat and Sauté Onions: Heat olive oil in a skillet over medium-high heat. Add diced onion and cook until softened. Add ground turkey, salt, pepper, and minced garlic. Cook until browned and crumbled.
  3. Combine Ingredients: In a large bowl, combine cooked spaghetti squash, browned ground turkey mixture, ketchup, mustard, Greek yogurt, and chopped pickles.
  4. Add Eggs and Cheese: In a separate bowl, whisk eggs. Add half of the shredded cheese to the spaghetti squash mixture and stir to combine. Pour in the whisked eggs and mix well.
  5. Bake: Transfer the mixture to the prepared baking dish and top with remaining cheddar cheese. Bake for 1 hour, or until set and golden brown.
