- 950g cooked spaghetti squash (about 1 large spaghetti squash)
- 1 tablespoon olive oil
- 1/2 yellow onion, diced
- 1 lb ground turkey (93/7 lean) – can substitute with ground beef
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 1/2 cup ketchup
- 1/4 cup mustard
- 1/4 cup nonfat plain Greek yogurt
- 1/2 cup chopped pickles
- 1 cup shredded lite cheddar cheese, divided
- 3 large eggs
Instructions
- Preheat and Prep: Preheat oven to 400°F (200°C). Grease a 9×9 inch baking dish. Cook spaghetti squash according to your preferred method and shred the flesh with a fork.
- Brown Meat and Sauté Onions: Heat olive oil in a skillet over medium-high heat. Add diced onion and cook until softened. Add ground turkey, salt, pepper, and minced garlic. Cook until browned and crumbled.
- Combine Ingredients: In a large bowl, combine cooked spaghetti squash, browned ground turkey mixture, ketchup, mustard, Greek yogurt, and chopped pickles.
- Add Eggs and Cheese: In a separate bowl, whisk eggs. Add half of the shredded cheese to the spaghetti squash mixture and stir to combine. Pour in the whisked eggs and mix well.
- Bake: Transfer the mixture to the prepared baking dish and top with remaining cheddar cheese. Bake for 1 hour, or until set and golden brown.
- Serve: Let the casserole cool for 15 minutes before serving.
Notes
- You can use any type of ground meat you like, such as ground beef or chicken.
- If you don’t have lite cheddar cheese, you can use regular cheddar cheese or a blend of your favorite cheeses.
- For a spicier casserole, add a pinch of cayenne pepper or red pepper flakes to the meat mixture.
