Crust
- 60 Nilla Wafers
- 5 tablespoons (71g) unsalted butter, melted
- 1/2 teaspoon salt
Filling and Toppings

- 1/2 teaspoon cinnamon
- 1 large Granny Smith apple, peeled, cored, and diced (about a heaping 1 cup)
- 2 cups (340g) white chocolate chips
- 20 Rolos, unwrapped (or other chocolate caramel candy)
- 1/2 cup (60g) pecans, chopped
Instructions
- Prepare the crust: Preheat your oven to 350°F (175°C). Line a 9×9 inch square baking pan with foil and lightly spray it with cooking spray to prevent sticking. Place the Nilla Wafers in a food processor and pulse until they become fine crumbs. Transfer the crumbs to a bowl, mix in the melted butter and salt thoroughly with a fork, then press this mixture evenly into the bottom of the prepared pan to form the crust. Bake the crust for 5 minutes to set.
- Mix sweetened condensed milk and cinnamon: While the crust is baking, combine the sweetened condensed milk and cinnamon in a small bowl or measuring cup, stirring until well combined. This mixture will add a creamy cinnamon-sweet layer on top of the bars.
- Assemble the bars: Once the crust is hot out of the oven, evenly sprinkle the diced Granny Smith apple, unwrapped Rolos, chopped pecans, and white chocolate chips over the crust. Pour the sweetened condensed milk mixture evenly over the top of these ingredients.
- Bake: Return the pan to the oven and bake for an additional 21 to 24 minutes, or until the edges are golden brown and the topping is bubbly and set.
- Cool and serve: Allow the bars to cool completely in the pan on a wire rack before lifting them out using the foil. Cut into 16 squares and serve. Enjoy the combination of gooey caramel, tart apple, and creamy white chocolate in every bite.
