For the Cajun Chicken Mixture:
- 1 lb lean ground chicken
- 15 oz canned corn, drained
- 1/2 cup diced red onions
- 10.5 oz condensed cream of chicken soup
- 2 tablespoon Cajun seasoning
- 1 tablespoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup mayo
For Serving:
- 4 large hamburger buns
- 1 cup shredded mozzarella and cheddar cheese blend
Instructions
- Preheat oven and cook chicken: Preheat oven to 400F. Cook ground chicken in a saute pan until fully cooked.
- Add vegetables and seasonings: Add corn, red onions, cream of chicken soup, Cajun seasoning, onion powder, salt, and pepper to the pan. Stir and cook for 3 minutes.
- Combine ingredients: Reduce heat, add mayo, and stir until combined.
- Toast buns: Place buns in oven to toast for 4-5 minutes.
- Assemble sandwiches: Spoon chicken mixture onto bottom buns, top with cheese, and place top buns. Serve and enjoy!
